When it comes to food, California does not disappoint. With year-round produce, an endless coastline, and innovative chefs, California offers a wide variety of culinary treats. However, narrowing down the state’s highlights can be difficult. To help, I spoke with Los Angeles-based writer and senior editor of Eater LA, Farley Elliott. If you’re planning a trip to California, oysters should be on your list. Since they are so abundant in the state, you will definitely want to sample them. The best oyster spots will give you a variety of oyster varieties, so you can sample many different styles. Oysters are typically served in three or four different varietals, and you should try several of each so that you can find your favorite.
Oysters come in different salinities, so you’ll want to pay special attention to where they come from. Oysters grown in a salty environment are known for having briny flavors. While East Coast oysters are generally subtidal, those raised in the nutrient-rich sediment of an oyster bed will have a more pronounced briny taste. Grassy Bars, or “Salmon,” are excellent choices for those who enjoy brininess.
